Description
A comforting dish of hoisin beef noodles featuring tender beef, crunchy vegetables, and soft rice noodles in a savory hoisin sauce.
Ingredients

- 8 oz rice noodles
- 1 lb beef, sliced into strips
- 2 cups mixed vegetables (bell peppers, carrots, snap peas)
- 3 tablespoons hoisin sauce
- 2 tablespoons soy sauce
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- 1 teaspoon ginger, minced
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- Cook the rice noodles according to package instructions. Drain and set aside.
- In a large skillet or wok, heat vegetable oil over medium-high heat. Add the sliced beef and cook until browned. Remove from skillet and set aside.
- In the same skillet, add minced garlic and ginger, sauté for about 30 seconds until fragrant.
- Add the mixed vegetables and stir-fry until tender-crisp, about 3-5 minutes.
- Return the beef to the skillet and add the hoisin sauce and soy sauce. Stir to combine, cooking for another 2 minutes.
- Add the cooked noodles to the skillet and toss everything together. Season with salt and pepper to taste.
- Serve hot, garnished with chopped green onions.
Notes
For added heat, include red pepper flakes or hot sauce. You can substitute beef with chicken or tofu for a different variation.
