Instructions
- In a large mixing bowl or with a stand mixer, combine the softened cream cheese, shredded cheddar, 3/4 cup of cranberries, 3/4 cup of chopped pecans, rosemary, salt, and pepper. Blend until the ingredients are well mixed. Shape the mixture into a spherical form.
- In a separate bowl, combine the remaining 1/4 cup of cranberries, the rest of the pecan pieces, and the parsley. Roll the cheese ball in this mixture until it is fully covered.
- Wrap the cheese ball securely in plastic wrap and chill in the refrigerator for a minimum of 2 hours, or leave it overnight for enhanced flavor.
