Ingredients

  • 1 cup (240 ml) Granulated Sugar
  • 2 cups (480 ml) Self-Rising Flour
  • 1/4 cup + 1 tablespoon (65 g) Vegetable Oil
  • 3/4 cup (180 ml) Orange Juice
  • 1 tablespoon (15 ml) Orange Zest (the zest of 1 orange)
  • 1 Egg, beaten
  • 1/2 cup (120 ml) Pecans, chopped
  • 2 cups (480 ml) Fresh Cranberries, chopped
  • 1/4 cup (30 g) Icing Sugar
  • 1 tablespoon (15 ml) Orange Juice
  • 1 tablespoon (15 ml) of Vegetable Oil to grease the bread pan

Instructions

  1. Set your oven to 350°F (176.667°C) to preheat.
  2. Roughly chop the fresh cranberries and pecans, then put them aside for later use.
  3. Combine the flour and sugar by sifting them together into a mixing bowl.
  4. Incorporate vegetable oil into the flour mixture by cutting it in.
  5. In a separate small bowl, beat the egg and then mix in the orange juice and zest. Add this liquid mixture to the dry ingredients.
  6. Stir just until the ingredients are combined, making sure not to overmix. Gently fold in the chopped cranberries and pecans.
  7. Transfer the batter into a 9×5 loaf pan that has been thoroughly greased. Bake for approximately one hour, or until the top is golden and a toothpick inserted in the center comes out clean.
  8. Let the bread rest in the pan for about 30 minutes to cool, then remove it and place it on a rack to cool completely.
  9. In a small mixing container, combine the icing sugar with orange juice and whisk until well blended. For a thinner glaze, add a bit more orange juice, mixing after each addition until the desired consistency is achieved.
  10. Pour the glaze over the top of the cooled cranberry bread loaf.
