- 1/2 cup + 1 tablespoon vegetable oil (140 ml)
- 1 cup popcorn kernels (240 g)
- 1/2 bag pretzels or more if desired
- 1 to 2 bags chocolate candies depending on how much you want
- 1 cup peanuts or more if desired (125 g)
- 1 to 2 cups dairy-free white chocolate chips* (180 g to 360 g)
- Maldon sea salt flakes optional
Instructions
- Utilize a sizable pot with a cover, adding just enough oil to coat the base, approximately half a cup, possibly more based on your pot’s dimensions. Introduce the popcorn kernels into the pot and secure the lid. Increase the heat to high and wait for the kernels to start popping. You may lift and gently shake the pot using oven mitts to ensure even distribution of the kernels.
- As the popping intensifies, maintain high heat and remain nearby. When the popping sound diminishes, reduce the heat. Once the popping ceases or becomes infrequent, switch off the heat and remove the pot from the stovetop.
- Transfer the popped corn into a large bowl or spread it over two baking sheets lined with parchment paper or a silicone mat. I prefer using a baking sheet for easy white chocolate distribution.
- Incorporate the pretzels, chocolate candies, and peanuts, mixing them gently.
- For the white chocolate, place the chips in a microwave-safe dish with the additional tablespoon of oil. Heat in 30-second intervals, stirring until the mixture is smooth and fully melted; this should take about 2 to 3 minutes.
- Drizzle the melted white chocolate over the popcorn blend. Allow it to set at room temperature, or place it in the refrigerator to speed up the hardening process. I left mine on the counter, which worked well. If desired, sprinkle with sea salt flakes or kosher salt for a touch of saltiness. Personally, I find the peanuts and pretzels provide sufficient salt, but feel free to add more if you prefer a sweet and salty combination.
- Once the chocolate has solidified, indulge in your snack mix! Alternatively, portion it into small treat bags or store it in a large airtight container. When sealed properly, it remains fresh for about 4 to 5 days.
