Ingredients

- 4 cups all-purpose flour
- 2¼ teaspoons active dry yeast (or instant yeast)
- 1 cup warm milk
- ⅓ cup sugar
- 2 large eggs
- 6 tablespoons butter, softened
- 1 teaspoon salt
- Vegetable oil for frying
- Granulated sugar for coating
Instructions
- Activate yeast in warm milk if using active dry yeast
- Mix dry ingredients in a large bowl
- Combine wet ingredients and mix into dry ingredients
- Knead dough until smooth and elastic
- Let rise until doubled in size
- Roll out dough and cut into donut shapes
- Let shaped donuts rise again
- Heat oil to 350°F
- Fry donuts until golden brown
- Cool and coat with sugar
Notes
- The dough can be made the night before and refrigerated after the first rise
- Maintain oil temperature at 350°F to prevent greasy donuts
- If using instant yeast, mix directly with dry ingredients
- Properly cooked donuts should feel light and spring back when pressed
- Use neutral oils with high smoke points like vegetable, canola, or peanut oil
