Ingredients

  • 1 tablespoon active dry yeast

  • Cornmeal for dusting

Instructions

  1. Combine warm water, sugar, and yeast in a bowl and let it sit until frothy.
  2. Mix in the flour, salt, and melted butter until a dough forms.
  3. Knead the dough on a floured surface for about 5 minutes.
  4. Place the dough in a greased bowl, cover, and let it rise until doubled in size, about 60 minutes.
  5. Punch down the dough and roll it out to about 1/2 inch thick.
  6. Cut into rounds with a biscuit cutter and place on a cornmeal-dusted baking sheet.
  7. Cover and let rise again for about 30 minutes.
  8. Heat a skillet over medium heat and cook the muffins for about 5-7 minutes on each side until golden brown.
  9. Let cool before slicing and serving.
