- ¼ cup (60 ml) water
- ¼ cup (57g) beef fat, softened or melted
- 2 tablespoons (27g) granulated sugar
- 1 tablespoon (15 ml) instant or active dry yeast

- 1 1/4 teaspoons (6 ml) salt
- 4 1/4 to 4 1/2 cups (604-639g) all-purpose flour
- Additional beef fat, for brushing hot, baked rolls
Instructions
- Warm the milk until you see small bubbles forming at the edges and steam rising, then transfer it to the bowl of a stand mixer with the dough hook attached.
- Combine the water, beef fat, and sugar with the milk. Allow this mixture to cool until it’s warm to the touch, similar to a pleasant bath.
- Mix in the yeast and let it sit for 5-7 minutes until it becomes foamy (this step isn’t mandatory before adding flour, but activating the yeast in this way can improve the dough’s rise).
- Incorporate the egg, salt, and flour (begin with 3 3/4 to 4 cups) into the mixture, gradually adding more flour until the dough pulls away from the sides of the bowl and forms a soft, sticky mass. Be careful not to add too much flour.
- Knead the dough for 5-6 minutes until it becomes smooth and soft.
- Allow the dough to rise in a warm place until it doubles in size, which should take about an hour. You can leave it in the mixing bowl or transfer it to a lightly greased bowl, covered.
- Prepare a 9×13-inch pan by greasing it. Gently deflate the dough, then place it onto a lightly greased surface.
- Cut the dough into 12 equal portions (each weighing 3 to 3.5 ounces). Shape each piece into a ball and arrange them in the prepared pan, leaving about 1/2-inch space between them (four rows with three rolls each).
- Preheat your oven to 375 degrees F and position a rack in the center.
- Cover the rolls and let them rise until they double in size, becoming very puffy with the sides touching each other.
- Bake the rolls for 15-20 minutes until they are golden on both the tops and bottoms. Immediately brush the tops with additional beef fat once they are out of the oven.
