- 1 cup all-purpose flour
- ½ teaspoon salt
- 2 large eggs
Instructions
- Whisk together the flour and salt in a bowl.
- Create a well in the center of the mixture.
- Crack the eggs into the well.
- Using a fork, whisk the eggs, allowing the flour to mix in gradually.
- Stir until a sticky dough forms.
- Turn the dough out onto a lightly floured surface and knead until smooth and shiny.
- Wrap the dough in plastic wrap and refrigerate for at least 30 minutes, or overnight for extra flavor.
- On a floured surface, roll the dough to your desired thickness.
- Using a pizza cutter, cut the noodles into even shapes.
- Unroll the noodles and let them dry on a wire rack for 2 to 3 hours.
Notes
For firmer noodles, use less egg. To add flavor, experiment with herbs or spices in the dough.
