Ingredients

  • 2 large eggs

Instructions

  1. Whisk together the flour and salt in a bowl.
  2. Create a well in the center of the mixture.
  3. Crack the eggs into the well.
  4. Using a fork, whisk the eggs, allowing the flour to mix in gradually.
  5. Stir until a sticky dough forms.
  6. Turn the dough out onto a lightly floured surface and knead until smooth and shiny.
  7. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes, or overnight for extra flavor.
  8. On a floured surface, roll the dough to your desired thickness.
  9. Using a pizza cutter, cut the noodles into even shapes.
  10. Unroll the noodles and let them dry on a wire rack for 2 to 3 hours.

Notes

For firmer noodles, use less egg. To add flavor, experiment with herbs or spices in the dough.
