- 11/4 cup (660 ml) s creamy peanut butter (divided )
- 3 cup (720 ml) s heavy cream
- 1 cup (240 ml) whole milk
- 1/2 cup (120 ml) granulated sugar
- 1/2 cup (120 ml) corn syrup
- 1/4 teaspoon (1 ml) salt
- 1 teaspoon (5 ml) vanilla extract
Instructions
- In a medium saucepan, combine 1 cup of peanut butter, heavy cream, milk, sugar, corn syrup, and salt. Heat the mixture until it starts to simmer, whisking frequently to ensure the sugar dissolves. Take the pan off the stove and add the vanilla extract.
- Chill the mixture in the refrigerator overnight or use an ice bath to cool it for 2 hours.
- Divide the mixture into two portions and pour each into a pre-cooled ice cream maker, churning it into ice cream. When the ice cream is nearly finished, heat ¼ cup of the remaining peanut butter in a pan or microwave until it becomes thin enough to pour. Allow it to cool slightly.
- Transfer the first batch of ice cream into a container, drizzling half of the peanut butter over it. Use a knife or spatula to create swirls of peanut butter through the ice cream. Place the ice cream in the freezer and repeat the process with the second batch. Freeze overnight to achieve an ideal texture for scooping.
