- 2/3 cup (160ml) canned pumpkin

- 1/3 cup (70g) light brown sugar
- 1/4 cup (60ml) vegetable oil
- 1/4 cup (60ml) milk
- 2 tsp (10ml) vanilla bean paste or vanilla extract
- 3/4 cup (90g) pecan halves
- 1/2 cup (100g) white granulated sugar
- 1/2 cup (100g) brown sugar
- 1/2 tsp (1g) cinnamon
- pinch of salt
- 1 1/2 cups (360ml) boiling water
Instructions
- Begin by setting your oven to 350 degrees F.
- In a medium bowl, blend together the flour, baking powder, salt, cinnamon, nutmeg, ginger, cloves, and both types of sugar. Stir until they are thoroughly mixed.
- In a larger bowl, mix the canned pumpkin, milk, vegetable oil, and vanilla bean paste or extract. Whisk these together until smooth.
- Gradually incorporate the dry mixture into the wet mixture, stirring gently until everything is just combined and no flour remains visible. Note that the mixture will be quite dense.
- Transfer the thick batter into a prepared pie dish and set it aside for now.
- In another bowl, combine the pecan halves with the sugars, cinnamon, and a pinch of salt. Scatter this blend evenly over the pumpkin mixture.
- Carefully pour 1.5 cups of boiling water over the surface without mixing it in.
- Put the cobbler in the preheated oven and allow it to bake for approximately 45 minutes, or until the middle is firm but tender.
- Once done, take it out of the oven and serve it warm, with a topping of ice cream, custard, or whipped cream. Enjoy!
