Delicious and crispy potatoes tossed with honey and bacon, perfect for any meal.


Ingredients

  • 4 large Russet or Yukon Gold potatoes, peeled & chopped
  • 6 slices thick-cut bacon
  • 3 tablespoons honey
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon onion powder
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and chop potatoes into bite-sized pieces.
  3. Soak potatoes in ice-cold water for 10 minutes, then drain and pat dry thoroughly.
  4. Cut bacon into 1-inch pieces and cook in a skillet until slightly crispy. Remove and set aside, reserving bacon fat.
  5. In a mixing bowl, toss the dried potatoes with olive oil, 1 tablespoon bacon fat, garlic, salt, pepper, and onion powder until well combined.
  6. Spread potatoes on a lined baking sheet in a single layer. Bake for 20 minutes.
  7. Remove from the oven, toss the potatoes, sprinkle the crispy bacon pieces on top, and drizzle with honey.
  8. Return to the oven and bake for another 15-20 minutes until golden and crispy. Broil for 2-3 minutes for extra crispiness if desired.
  9. Garnish with fresh parsley and additional black pepper. Serve hot and enjoy!
