Delicious and crispy potatoes tossed with honey and bacon, perfect for any meal.
Ingredients

- 4 large Russet or Yukon Gold potatoes, peeled & chopped
- 6 slices thick-cut bacon
- 3 tablespoons honey
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon onion powder
- 2 tablespoons fresh parsley, chopped
Instructions
- Preheat the oven to 400°F (200°C).
- Peel and chop potatoes into bite-sized pieces.
- Soak potatoes in ice-cold water for 10 minutes, then drain and pat dry thoroughly.
- Cut bacon into 1-inch pieces and cook in a skillet until slightly crispy. Remove and set aside, reserving bacon fat.
- In a mixing bowl, toss the dried potatoes with olive oil, 1 tablespoon bacon fat, garlic, salt, pepper, and onion powder until well combined.
- Spread potatoes on a lined baking sheet in a single layer. Bake for 20 minutes.
- Remove from the oven, toss the potatoes, sprinkle the crispy bacon pieces on top, and drizzle with honey.
- Return to the oven and bake for another 15-20 minutes until golden and crispy. Broil for 2-3 minutes for extra crispiness if desired.
- Garnish with fresh parsley and additional black pepper. Serve hot and enjoy!

Ensure potatoes are dried thoroughly after soaking to achieve maximum crispiness.
