Instructions
- Preheat oven to 400°F (200°C).
- Wash potatoes and pat them completely dry. Cut into even-sized pieces.
- In a large bowl, combine olive oil, honey, minced garlic, rosemary, salt, and pepper.
- Add the potatoes to the bowl and toss until evenly coated.
- Arrange potatoes in a single layer on a baking sheet, ensuring they’re not overcrowded.
- Sprinkle chopped bacon evenly over the potatoes.
- Roast for 35-45 minutes, turning halfway through, until potatoes are golden and crispy on the outside and tender inside.
- Serve immediately for best results.
