- 1/2 teaspoon (3 ml) black pepper (1 gram)
- 1 teaspoon (5 ml) dried thyme (1 gram)
- 1/4 cup (60 ml) chopped fresh parsley (15 grams)
Instructions
- Preheat the oven to 400°F (200°C).
- Peel the sweet potatoes and cut them into 1-inch cubes.
- Place the sweet potato cubes on a baking sheet.
- Drizzle 1 tablespoon of olive oil over the sweet potatoes.
- Sprinkle 1/2 teaspoon of salt and 1/4 teaspoon of black pepper onto the sweet potatoes.
- Toss the sweet potatoes to coat them evenly with oil and seasoning.
- Spread the sweet potatoes in a single layer on the baking sheet.
- Bake the sweet potatoes for 20-25 minutes, until they are tender.
- While the sweet potatoes bake, slice the chicken sausage into 1/2-inch rounds.
- Heat the remaining 1 tablespoon of olive oil in a large skillet over medium heat.
- Add the chicken sausage slices to the skillet.
- Cook the sausage for 5-7 minutes, until they are browned and cooked through.
- Add the minced garlic to the skillet with the sausage.
- Cook for 1 minute, stirring frequently, until the garlic is fragrant.
- Reduce the heat to low and add the honey to the skillet.
- Stir in the remaining 1/2 teaspoon of salt, 1/4 teaspoon of black pepper, and the dried thyme.
- Simmer the mixture for 2-3 minutes, allowing the flavors to combine.
- Remove the skillet from heat and add the baked sweet potatoes.
