- 4 boneless, skinless chicken breasts (approximately 1.5 lbs)
- 1/4 cup fresh lime juice (about 2 limes)
- 1/4 cup pure honey
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 cup fresh cilantro, chopped (for garnish)
- 1 tsp cumin powder
- 1 tsp chili powder (optional)
Instructions
- In a bowl, whisk together lime juice, honey, garlic, olive oil, cumin powder, chili powder (if using), salt, and pepper until smooth.
- Place the chicken breasts in a resealable plastic bag or shallow dish and pour the marinade over them. Seal tightly and refrigerate for at least 30 minutes (up to overnight).
- Preheat grill to medium-high heat (375°F) or oven to 400°F.
- Grill chicken for about 5-7 minutes per side until the internal temperature reaches 165°F. For baking, place in a greased baking dish and cook for approximately 20-25 minutes.
- Allow the chicken to rest for 5 minutes before slicing. Garnish with cilantro and serve with rice or veggies.
Notes
For best flavor, marinate the chicken as long as possible. Fresh cilantro adds a pop of color and aroma.
