Instructions
- Turn on the oven to 350°F (175°C) and prepare a muffin tin with paper liners.
- In a medium-sized bowl, combine the all-purpose flour, baking powder, baking soda, and salt by whisking.
- In a separate large bowl, cream together the softened butter and granulated sugar until the mixture is fluffy and light.
- Add the eggs to the butter mixture one by one, making sure to beat well after each addition, then blend in the vanilla extract.
- Gradually incorporate the flour mixture and buttermilk into the butter mixture, beginning and finishing with the flour, stirring until just mixed.
- Spoon the batter into the cupcake liners until they are half full, place a dollop of peach preserves in the center, then add more batter until each liner is three-quarters full.
- Place in the oven and bake for 18-20 minutes, or until a toothpick inserted into the middle comes out clean, then allow the cupcakes to cool fully.
- To make the frosting, blend the softened cream cheese, powdered sugar, and milk together until the mixture is smooth and creamy.
