  • 1/2 cup (120 ml) cream cheese, softened.
  • 1/4 cup (60 ml) powdered sugar.
  • 1 tablespoon (15 ml) milk.
  • 1/2 cup (120 ml) diced fresh peaches.
  • 2 tablespoon (30 ml) s honey (for drizzle).
  • Sugar crystals (for garnish).

Instructions

  1. Turn on the oven to 350°F (175°C) and prepare a muffin tin with paper liners.
  2. In a medium-sized bowl, combine the all-purpose flour, baking powder, baking soda, and salt by whisking.
  3. In a separate large bowl, cream together the softened butter and granulated sugar until the mixture is fluffy and light.
  4. Add the eggs to the butter mixture one by one, making sure to beat well after each addition, then blend in the vanilla extract.
  5. Gradually incorporate the flour mixture and buttermilk into the butter mixture, beginning and finishing with the flour, stirring until just mixed.
