  • 1 tablespoon pure vanilla extract or paste (15ml)
  • 1 3/4 cups all-purpose flour (210g)
  • 1 teaspoon (5 ml) baking soda
  • 1/2 teaspoon (3 ml) salt
  • optional mix-ins or toppings: crushed nuts, chocolate chips, peanut butter glaze or frosting

Instructions

  1. Set your oven to a temperature of 325 degrees and lightly coat an 8½x4½ inch loaf pan with grease.
  2. In a sizable bowl, blend the vegetable oil and honey using a whisk, then incorporate the eggs, mashed bananas, milk, and vanilla until smooth.
  3. In another bowl, mix together the all-purpose flour, baking soda, and salt.
  4. Combine the wet mixture with the dry ingredients, stirring only until they are just mixed together.
  5. Transfer the mixture into the prepared loaf pan and sprinkle any desired toppings on top. If using banana as a topping, cut it lengthwise and place it on the batter with the cut side facing up.
  6. Place the loaf in the oven and bake for 50-55 minutes, or until a toothpick inserted in the middle comes out free of batter.
  7. Allow the bread to cool in the pan for about 15 minutes, then move it to a wire rack to continue cooling for at least another 30 minutes before cutting into slices.
