- 2 ripe pears
- 2 tablespoons honey (30 ml)
- 1 tablespoon olive oil (15 ml)
- 1 teaspoon ground cinnamon (5 g)
- 1/2 teaspoon red pepper flakes (1.5 g)
- 1 cup plain yogurt (240 ml)
- 1/4 cup chopped nuts, such as almonds or walnuts (30 g)
- 1 tablespoon lemon juice (15 ml)
- 1 teaspoon vanilla extract (5 ml)
Instructions
- Preheat the oven to 375°F (190°C).
- Wash and halve the pears, removing the core.
- Place pear halves on a baking sheet, cut side up.
- In a small bowl, mix honey, olive oil, cinnamon, red pepper flakes, and lemon juice.
- Drizzle the honey mixture over the pears evenly.
- Roast pears in the oven for 20-25 minutes until tender.
- While pears are roasting, mix yogurt and vanilla extract in a bowl.
- Toast the chopped nuts in a dry skillet over medium heat for 3-4 minutes, stirring frequently.
- Once pears are done, remove them from the oven and let them cool slightly.
- Serve each pear half with a dollop of yogurt.
- Sprinkle toasted nuts over the yogurt-topped pears.
- Drizzle any remaining honey mixture from the baking sheet over the pears before serving.
