Instructions
- Preheat the oven to 425°F (220°C).
- Scrub the potatoes under cold water and pat them dry.
- Poke a few holes in each potato with a fork.
- Rub the skin with olive oil and sprinkle generously with kosher salt.
- Place the potatoes directly on the oven rack or on a baking sheet.
- Bake for about 45-60 minutes, or until the skin is crispy and a fork easily pierces the flesh.

Notes
