- 1 lb Italian sausage
- 4 slices bacon
- 1 bunch kale, chopped
- 4 medium potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- Salt and pepper to taste
- Red pepper flakes (optional)
Instructions
- Cook the bacon in a large pot over medium heat until crispy. Remove and set aside, leaving drippings in the pot.
- Add the Italian sausage and cook until golden brown.
- Stir in the chopped onion and minced garlic, cooking until softened and fragrant.
- Add the diced potatoes and chicken broth; bring to a boil, then reduce heat and simmer for about 15 minutes until potatoes are tender.
- Stir in the chopped kale and let it wilt.
- Pour in heavy cream, mixing well. Season with salt, pepper, and red pepper flakes if desired.
- Crumble the reserved bacon back into the pot and simmer for another five minutes.
- Serve hot, optionally with fresh parsley and crusty bread.
Notes
For best results, consider making the soup a day in advance and add a squeeze of lemon juice before serving for brightness.
