Description

A hearty and comforting Tuscan soup featuring Italian sausage, crispy bacon, fresh kale, and tender potatoes simmered in rich chicken broth.


Ingredients

  • 1 lb Italian sausage
  • 4 slices bacon
  • 1 bunch kale, chopped
  • 4 medium potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Red pepper flakes (optional)

Instructions

  1. Cook the bacon in a large pot over medium heat until crispy. Remove and set aside, leaving drippings in the pot.
  2. Add the Italian sausage and cook until golden brown.
  3. Stir in the chopped onion and minced garlic, cooking until softened and fragrant.
  4. Add the diced potatoes and chicken broth; bring to a boil, then reduce heat and simmer for about 15 minutes until potatoes are tender.
  5. Stir in the chopped kale and let it wilt.
  6. Pour in heavy cream, mixing well. Season with salt, pepper, and red pepper flakes if desired.
  7. Crumble the reserved bacon back into the pot and simmer for another five minutes.
  8. Serve hot, optionally with fresh parsley and crusty bread.

Notes

For best results, consider making the soup a day in advance and add a squeeze of lemon juice before serving for brightness.
