Description

Ingredients

  • 2 sticks butter, softened
  • 1/2 cup granulated sugar
  • 2 cups flour
  • 1/8 teaspoon salt
  • 6 extra-large eggs
  • 3 cups granulated sugar
  • 2 tablespoons grated lemon zest
  • 1 cup lemon juice
  • 1 cup flour
  • Powdered sugar, for dusting

Instructions

  1. Cream together the softened butter and 1/2 cup of granulated sugar in a large mixing bowl until light and fluffy.
  2. Mix in 2 cups of flour and 1/8 teaspoon of salt until the dough forms.
  3. Press the dough into a prepared 9×13 inch pan, building up a 1/2 inch crust along the sides.
  4. Bake the crust for 15-20 minutes or until lightly golden brown.
  5. Whisk together the remaining ingredients: 6 extra-large eggs, 3 cups of granulated sugar, 2 tablespoons of grated lemon zest, and 1 cup of lemon juice until smooth.
  6. Pour the lemon filling into the cooled crust and return to the oven.
  7. Bake for 30-35 minutes, or until the filling is set and slightly firm.
  8. Let the baked lemon bars cool to room temperature and chill them for an even firmer texture.
  9. Dust the top with powdered sugar before cutting into squares.

Notes

Experiment with lemon juice for a more intense flavor. Serve with a garnish for an added touch.
