- 2 boneless ribeye or sirloin steaks, approximately 6 oz each
- 12 oz dry fettuccine or spaghetti
- 2 tablespoons olive oil
- Salt and black pepper to taste
- 2 tablespoons unsalted butter
- 4 cloves finely minced garlic
- ½ cup heavy cream
- ½ cup grated Parmesan cheese
- ½ cup beef broth (optional)
- ¼ teaspoon crushed red pepper flakes (optional)
- ¼ cup chopped fresh parsley or basil for garnish
Instructions
- Boil water in a large pot. Add salt and cook the fettuccine or spaghetti until al dente; reserve some pasta water.
- Season both sides of the steaks with salt and black pepper. Heat olive oil in a skillet over medium-high heat.
- Add steaks to the skillet and cook for 4-5 minutes on each side for medium-rare. Let rest, then slice against the grain.
- In the same skillet, melt butter and sauté minced garlic for about a minute until fragrant.
- Pour in heavy cream, stirring to combine, then add grated Parmesan cheese and beef broth. Stir until the sauce thickens.
- Toss the cooked pasta in the sauce, adding reserved pasta water to reach desired consistency.
- Serve pasta topped with sliced steak and garnished with parsley or basil, and sprinkle with red pepper flakes if desired.
