Ingredients
- – 1 2/3 cups (400 ml) all-purpose flour
- – 1/2 cup (120 ml) Dutch process cocoa powder
- – 1 tsp (5 ml). kosher salt
- – 1 tsp (5 ml). espresso powder
- – 1/2 tsp (3 ml). baking powder
- – 1/2 tsp (3 ml). baking soda
- – 1 cup (240 ml) granulated sugar
- – 1/2 cup (120 ml) vegetable oil
- – 1/4 heaping cup (60 ml) plain yogurt, room temperature
- – 2 large eggs, room temperature
- – 1 Tbsp (15 ml). vanilla
- – 2 zucchini (~2 cups (480 ml) shredded)
- – 1 cup (240 ml) dark chocolate chips, plus more for decorating on top
Instructions
- Heat your oven to 350°F and prepare a 9×5 inch loaf pan by either greasing and flouring it or lining it with parchment paper. (Tip: If you choose the grease and flour method, try using cocoa powder instead of plain flour for dusting!)
- Shred the zucchini using the small holes of a box grater. (You don’t need to peel them or remove any moisture; the moisture is beneficial for the bread!) Set it aside.
- Combine the dry ingredients in a mixing bowl: flour, cocoa powder, kosher salt, espresso powder, baking powder, and baking soda.
- Use a whisk to blend them together, then put the bowl aside.
- In a separate bowl, combine sugar, vegetable oil, yogurt, eggs, and vanilla extract.
- Whisk this mixture until it is smooth.
- Pour the wet mixture into the bowl with the dry ingredients and stir until they are mostly mixed together.
- Next, incorporate the grated zucchini and chocolate chips into the mixture.
- Stir everything together just until combined, being careful not to overmix.
- Transfer the batter into the prepared loaf pan and spread it out evenly. Sprinkle extra chocolate chips on top for decoration.
- Place in the oven and bake for about 60 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bread cool, then slice and enjoy! It tastes excellent with a sprinkle of flaky sea salt or a spread of butter or peanut butter on top!
