Ingredients

  • 2 pounds stew meat (beef tips)
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • Salt and pepper to taste
  • 1 tablespoon cornstarch (optional, for thickening)
  • Mashed potatoes (for serving)

Instructions

  1. Set the Instant Pot to ‘Sauté’ mode. Add the olive oil and chopped onion, cooking until softened.
  2. Add the minced garlic and stew meat, browning the meat on all sides.
  3. Stir in beef broth, Worcestershire sauce, salt, and pepper.
  4. Close the lid and set the Instant Pot to ‘Manual’ mode at high pressure for 35 minutes.
  5. Allow natural release for 10 minutes, then quick release any remaining pressure.
  6. If desired, mix cornstarch with a little water and stir into the pot to thicken the gravy.
  7. Serve hot over mashed potatoes.
