- 2 pounds stew meat (beef tips)
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cups beef broth
- 1 tablespoon Worcestershire sauce
- Salt and pepper to taste
- 1 tablespoon cornstarch (optional, for thickening)
- Mashed potatoes (for serving)
Instructions
- Set the Instant Pot to ‘Sauté’ mode. Add the olive oil and chopped onion, cooking until softened.
- Add the minced garlic and stew meat, browning the meat on all sides.
- Stir in beef broth, Worcestershire sauce, salt, and pepper.
- Close the lid and set the Instant Pot to ‘Manual’ mode at high pressure for 35 minutes.
- Allow natural release for 10 minutes, then quick release any remaining pressure.
- If desired, mix cornstarch with a little water and stir into the pot to thicken the gravy.
- Serve hot over mashed potatoes.
