- 2 pounds lamb shoulder, cut into chunks
- 1 onion, diced
- 2 cloves garlic, minced
- 1 carrot, diced
- 1 celery stalk, diced
- 1 can (14 ounces) crushed tomatoes
- 1 cup beef broth
- 2 teaspoons dried oregano
- 2 teaspoons dried thyme
- Salt and pepper to taste
- Olive oil for sautéing
- Fresh parsley for garnish
- Pasta of choice (for serving)
Instructions
- Set the Instant Pot to ‘Sauté’ mode. Add olive oil and sauté the onion, garlic, carrot, and celery until softened.
- Add the lamb chunks and sear until browned on all sides.
- Pour in the broth and scrape up any browned bits from the bottom of the pot.
- Add the crushed tomatoes, oregano, thyme, salt, and pepper.
- Close the lid and set the Instant Pot to ‘Manual’ mode for 45 minutes.
- Allow the pressure to release naturally for 10 minutes, then do a quick release for any remaining pressure.
- Serve the lamb ragu over your choice of pasta and garnish with fresh parsley.
Notes
For a custom touch, consider adding a splash of vinegar or chili flakes for heat. Experiment with other herbs such as rosemary or bay leaves.
