Description

This Instant Pot Lamb Ragu is a hearty and comforting dish, perfect for family gatherings or impressing guests, combining tender lamb with rich flavors in a fraction of the time.


Ingredients

  • 2 pounds lamb shoulder, cut into chunks
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 1 can (14 ounces) crushed tomatoes
  • 1 cup beef broth
  • 2 teaspoons dried oregano
  • 2 teaspoons dried thyme
  • Salt and pepper to taste
  • Olive oil for sautéing
  • Fresh parsley for garnish
  • Pasta of choice (for serving)

Instructions

  1. Set the Instant Pot to ‘Sauté’ mode. Add olive oil and sauté the onion, garlic, carrot, and celery until softened.
  2. Add the lamb chunks and sear until browned on all sides.
  3. Pour in the broth and scrape up any browned bits from the bottom of the pot.
  4. Add the crushed tomatoes, oregano, thyme, salt, and pepper.
  5. Close the lid and set the Instant Pot to ‘Manual’ mode for 45 minutes.
  6. Allow the pressure to release naturally for 10 minutes, then do a quick release for any remaining pressure.
  7. Serve the lamb ragu over your choice of pasta and garnish with fresh parsley.

Notes

For a custom touch, consider adding a splash of vinegar or chili flakes for heat. Experiment with other herbs such as rosemary or bay leaves.
