  • 1 teaspoon (5 ml) vanilla extract
  • 3/4 cup (180 ml) light brown sugar or coconut sugar
  • 1/2 cup (120 ml) vegan dark or semisweet chocolate chips

Instructions

  1. Set your oven to 350°F and prepare a 12-cup muffin tin by coating it with cooking spray.
  2. In a medium-sized bowl, combine the flour, baking soda, cinnamon, and salt by whisking them together.
  3. In a large bowl, thoroughly blend the mashed bananas, plant-based milk, vegetable oil, flax eggs, vanilla extract, and sugar using a whisk or hand mixer.
  4. Gradually incorporate the dry mixture into the wet mixture, stirring just enough to combine without over-mixing. Fold the chocolate chips into the batter.
  5. Distribute the batter evenly into the greased muffin tin. Place it in the oven and bake for 20 to 25 minutes, checking with a toothpick to ensure it comes out clean. Let the muffins cool in the tin on a wire rack for 10 minutes. Take the muffins out and allow them to cool completely on the wire rack.
