- 3/4 cup (180 ml) light brown sugar or coconut sugar
- 1/2 cup (120 ml) vegan dark or semisweet chocolate chips
Instructions
- Set your oven to 350°F and prepare a 12-cup muffin tin by coating it with cooking spray.
- In a medium-sized bowl, combine the flour, baking soda, cinnamon, and salt by whisking them together.
- In a large bowl, thoroughly blend the mashed bananas, plant-based milk, vegetable oil, flax eggs, vanilla extract, and sugar using a whisk or hand mixer.
- Gradually incorporate the dry mixture into the wet mixture, stirring just enough to combine without over-mixing. Fold the chocolate chips into the batter.
- Distribute the batter evenly into the greased muffin tin. Place it in the oven and bake for 20 to 25 minutes, checking with a toothpick to ensure it comes out clean. Let the muffins cool in the tin on a wire rack for 10 minutes. Take the muffins out and allow them to cool completely on the wire rack.
