- Set your oven to 350 degrees Fahrenheit. Lightly coat a 9×13-inch baking tray with oil and keep it aside.
- In a medium pot, heat the vegetable oil over medium heat, stirring frequently, until it starts to bubble and gives off a nutty aroma, turning a brown color. This process will take roughly 5 to 7 minutes. Transfer the browned oil into a big bowl and allow it to cool for about 10 minutes.
- In another bowl of medium size, combine the flour, baking powder, cinnamon, sea salt, nutmeg, and ginger by whisking them together. Set this mixture aside.
- Mix the brown sugar and white sugar into the cooled brown oil until the mixture is smooth. Incorporate the egg, egg yolk, and vanilla extract. Stir in the shredded zucchini until the mixture is thoroughly blended.
- Gently combine the dry mixture with the wet ingredients, being careful not to overmix. Fold in one cup of chocolate chips.
