Ingredients
- – 3 1/4 cups (780 ml) All-Purpose Flour
- – 2 teaspoons (10 ml) Baking Soda
- – 1/2 teaspoon (2.5 ml) Baking Powder
- – 1/2 teaspoon (2.5 ml) Salt
- – 2 teaspoons (10 ml) Cinnamon
- – 1/4 teaspoon (1.25 ml) Nutmeg
- – 1 cup (240 ml) Vegetable Oil
- – 2 cups (475 ml) Granulated Sugar
- – 3 Large Eggs
- – 1/2 cup (120 ml) Sour Cream
- – 4 cups (600 g) Zucchini, shredded
- – 1 cup (175 g) Mini Chocolate Chips, divided
Instructions
- Set your oven to a temperature of 350 degrees F.
- Coat two 9×5-inch loaf pans with nonstick spray and clean the top 1″ edge around the pans.
- In a large bowl, combine the flour, baking soda, baking powder, salt, cinnamon, and nutmeg using a whisk. Put this mixture aside.
- In a separate bowl, mix the oil and sugar thoroughly. Then add the eggs and sour cream, and whisk together.
- Add the shredded zucchini to the egg mixture and switch to a wooden spoon, stirring gently but avoiding over-mixing.
- Incorporate the dry ingredients into the wet mixture along with the mini chocolate chips, keeping 1/4 cup of chips for later. Use a rubber spatula or wooden spoon to gently fold until only a few streaks of flour remain.
- Divide the batter evenly between the two prepared loaf pans.
- Bake for 50 minutes, then carefully open the oven slightly and cover the bread with a piece of foil. Close the oven and continue baking for an additional 10 minutes.
- After baking, turn off the oven and leave the bread to rest with the door open for 2-3 minutes before transferring it to the counter to cool a bit more.
- Run a knife around the edges of the pan to loosen the bread, then gently remove it by tipping it onto your hand or directly onto a cooling rack. Turn it right side up, sprinkle with reserved chocolate chips, and enjoy warm if desired.
