- 1 ½ cups (360 ml) grated zucchini, squeezed and liquid drained
- 1 ½ cups (360 ml) chocolate chips
Instructions
- Warm up your oven to 375°F and prepare a muffin tray with paper liners.
- In a small mixing bowl, combine the flour, cocoa powder, baking powder, baking soda, and salt, whisking them together.
- In a larger bowl, mix the eggs with the sugar. Add the milk and vegetable oil, stirring until smooth. Incorporate the vanilla extract.
- Gently fold the dry ingredients into the wet mixture until just blended. Add the grated zucchini and mix. Finally, fold in the chocolate chips.
- Spoon the batter into the lined muffin cups, filling each about three-quarters full. Bake the muffins for 18 to 22 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the muffins to cool down before enjoying them.
