- 2 tbsp (30 ml) Milk (or non-dairy milk)
Instructions
- Set your oven to 350°F (175°C) and get the baking pan ready by applying a thin layer of butter or oil, then lightly coating it with flour.
- In a large bowl, blend the softened butter with the granulated sugar until the mixture becomes airy and light, taking about 3-5 minutes.
- Introduce the eggs one by one, ensuring each is well incorporated before adding the next, and then mix in the vanilla extract.
- In another bowl, combine the flour, baking soda, salt, cinnamon, nutmeg, and cloves by whisking them together.
- Slowly incorporate the dry mixture into the creamed mixture, mixing gently, and then gently fold in the finely grated zucchini.
- Pour and level the batter in the prepped baking pan, and place it in the oven for 25-30 minutes.
- Use a toothpick to test if it’s done, then allow it to cool in the pan on a wire rack for roughly an hour.
- Make the frosting by blending powdered sugar with milk until you achieve a smooth consistency, and then spread it over the cooled bars.
