Ingredients

Scale
  • 1 cup (240 ml) all-purpose flour (125 grams)
  • 1/2 cup (120 ml) unsweetened cocoa powder (50 grams)
  • 1 teaspoon (5 ml) baking soda (5 grams)
  • 1/4 teaspoon (1 ml) salt (1.5 grams)
  • 1/2 cup (120 ml) granulated sugar (100 grams)
  • 1/2 cup (120 ml) packed brown sugar (100 grams)
  • 1/3 cup (80 ml) vegetable oil (80 milliliters)
  • 2 large eggs
  • 1 teaspoon (5 ml) vanilla extract (5 milliliters)
  • 1 1/2 cups (360 ml) grated zucchini (about 1 medium zucchini, 225 grams)
  • 1/2 cup (120 ml) semi-sweet chocolate chips (90 grams)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  3. In another bowl, mix the granulated sugar, brown sugar, and vegetable oil until well combined.
  4. Add the eggs and vanilla extract to the sugar mixture and stir until smooth.
  5. Gently fold the grated zucchini into the wet ingredients until evenly distributed.
  6. Gradually add the dry ingredients to the wet mixture, stirring just until combined.
  7. Fold in the chocolate chips until evenly distributed throughout the batter.
  8. Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full.
  9. Bake the muffins in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  10. Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • Thoroughly squeeze excess moisture from grated zucchini to avoid a soggy texture in the muffins.
  • Substitute dark chocolate chips for a richer flavor.
  • Enhance chocolate taste by adding espresso powder to the dry ingredients.
