- 1 teaspoon (5 ml) ground cinnamon
- 1 cup (130g) shredded zucchini
- optional: 2 teaspoons (10 ml) orange zest
- optional: 3/4 cup (95g) chopped walnuts, 115g dried cranberries, or 135g dried fruit chips
Instructions
- Set your oven to 350°F (177°C) and lightly coat a loaf pan measuring 9×5 inches with grease.
- In a medium-sized bowl, blend the oil, honey, egg, yogurt, and vanilla until they are thoroughly mixed.
- In a separate larger bowl, combine the flour, baking powder, baking soda, salt, and cinnamon by whisking them together.
- Add the mixture from the medium bowl into the larger bowl and stir with a large wooden spoon or rubber spatula until just combined, being careful not to overmix.
- Gently incorporate the zucchini, orange zest, and walnuts into the batter.
- Pour the batter evenly into the greased loaf pan.
- Place in the oven and cook for 40-50 minutes, keeping an eye on it as baking times can differ. The bread is fully baked when a toothpick inserted in the center emerges clean. If the top starts to brown too fast, loosely cover it with aluminum foil.
- Take the bread out of the oven and place it on a wire rack to cool entirely before slicing and serving.
- Store any remaining bread at room temperature, covered, for up to five days.
