  • 1 teaspoon (5 ml) baking powder
  • 1/2 teaspoon (3 ml) baking soda
  • 1/2 teaspoon (3 ml) salt
  • 1 teaspoon (5 ml) ground cinnamon
  • 1 cup (130g) shredded zucchini
  • optional: 2 teaspoons (10 ml) orange zest
  • optional: 3/4 cup (95g) chopped walnuts, 115g dried cranberries, or 135g dried fruit chips

Instructions

  1. Set your oven to 350°F (177°C) and lightly coat a loaf pan measuring 9×5 inches with grease.
  2. In a medium-sized bowl, blend the oil, honey, egg, yogurt, and vanilla until they are thoroughly mixed.
  3. In a separate larger bowl, combine the flour, baking powder, baking soda, salt, and cinnamon by whisking them together.
  4. Add the mixture from the medium bowl into the larger bowl and stir with a large wooden spoon or rubber spatula until just combined, being careful not to overmix.
  5. Gently incorporate the zucchini, orange zest, and walnuts into the batter.
  6. Pour the batter evenly into the greased loaf pan.
  7. Place in the oven and cook for 40-50 minutes, keeping an eye on it as baking times can differ. The bread is fully baked when a toothpick inserted in the center emerges clean. If the top starts to brown too fast, loosely cover it with aluminum foil.
  8. Take the bread out of the oven and place it on a wire rack to cool entirely before slicing and serving.
