- 2 large eggs
- zest of 1 small lemon (about 2 teaspoons (10 ml))
- 2 tablespoons (30 ml) turbinado sugar
Instructions
- Preheat the oven and prepare the loaf pan. Set the oven to 350°F. Line a 9×5-inch loaf pan with parchment paper or lightly coat it with cooking spray.
- Combine the dry ingredients. In a small mixing bowl, blend the flour, pumpkin pie spice, baking powder, salt, and baking soda using a whisk until they are well mixed.
- Mix the wet components. In a separate large mixing bowl, gently combine the grated zucchini, vegetable oil, light brown sugar, granulated sugar, vanilla extract, eggs, and lemon zest until they are uniformly mixed. Add the dry ingredients to the wet mixture and carefully fold them together until there are no visible dry spots, being cautious not to overmix.
- Bake the bread. Pour the batter into the prepared loaf pan and evenly sprinkle the turbinado sugar on top. Place in the oven and bake for 55 to 60 minutes, or until a toothpick inserted into the center comes out clean. Move the pan to a wire rack and allow the bread to cool to room temperature.
