Ingredients

  • 8 oz rice noodles
  • 2 tablespoons vegetable oil
  • 2 garlic cloves, minced
  • 1 small onion, sliced
  • 1 bell pepper, sliced
  • 1 cup broccoli florets
  • 1 cup sliced mushrooms
  • 1 carrot, julienned
  • 1/4 cup soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon chili paste
  • 1/2 cup basil leaves
  • 1 teaspoon sugar
  • Salt and pepper to taste

Instructions

  1. Cook rice noodles according to package instructions, drain, and set aside.
  2. In a large skillet or wok, heat vegetable oil over medium heat.
  3. Add garlic and onion, and sauté until fragrant, about 2 minutes.
  4. Add bell pepper, broccoli, mushrooms, and carrot, stir-fry for about 5 minutes until tender.
  5. In a bowl, mix soy sauce, oyster sauce, chili paste, and sugar.
  6. Add cooked noodles to the skillet, pour the sauce mixture over, and toss to combine everything well.
  7. Stir in fresh basil and season with salt and pepper to taste.
  8. Serve hot.

Notes

For a spicier version, increase the amount of chili paste to your taste. Fresh basil enhances flavor at the end.
