- 8 oz rice noodles
- 2 tablespoons vegetable oil
- 2 garlic cloves, minced
- 1 small onion, sliced
- 1 bell pepper, sliced
- 1 cup broccoli florets
- 1 cup sliced mushrooms
- 1 carrot, julienned
- 1/4 cup soy sauce
- 2 tablespoons oyster sauce
- 1 tablespoon chili paste
- 1/2 cup basil leaves
- 1 teaspoon sugar
- Salt and pepper to taste
Instructions
- Cook rice noodles according to package instructions, drain, and set aside.
- In a large skillet or wok, heat vegetable oil over medium heat.
- Add garlic and onion, and sauté until fragrant, about 2 minutes.
- Add bell pepper, broccoli, mushrooms, and carrot, stir-fry for about 5 minutes until tender.
- In a bowl, mix soy sauce, oyster sauce, chili paste, and sugar.
- Add cooked noodles to the skillet, pour the sauce mixture over, and toss to combine everything well.
- Stir in fresh basil and season with salt and pepper to taste.
- Serve hot.
Notes
For a spicier version, increase the amount of chili paste to your taste. Fresh basil enhances flavor at the end.
