- 1 cup diced carrots
- 1 cup diced celery
- 1 cup diced onions
- 2 cloves minced garlic
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- Salt and pepper to taste
- Optional: Spinach or kale
Instructions
- Heat oil in a large pot over medium heat.
- Add diced onions and minced garlic; sauté until onions are translucent (3-5 minutes).
- Add diced carrots and celery; cook until softened (5-7 minutes).
- Pour in the broth, thyme, parsley, salt, and pepper; bring to a simmer.
- Simmer for 20 minutes, adding spinach or kale in the last 5 minutes of cooking.
- Serve warm, garnished with herbs or a drizzle of olive oil.
Notes
Homemade broth can enhance the flavor. Store leftovers in airtight containers.
