Ingredients

  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 cup diced onions
  • 2 cloves minced garlic
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • Salt and pepper to taste
  • Optional: Spinach or kale

Instructions

  1. Heat oil in a large pot over medium heat.
  2. Add diced onions and minced garlic; sauté until onions are translucent (3-5 minutes).
  3. Add diced carrots and celery; cook until softened (5-7 minutes).
  4. Pour in the broth, thyme, parsley, salt, and pepper; bring to a simmer.
  5. Simmer for 20 minutes, adding spinach or kale in the last 5 minutes of cooking.
  6. Serve warm, garnished with herbs or a drizzle of olive oil.

Notes
