- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 8 cups chicken broth
- 1 can (14.5 ounces) diced tomatoes
- 1 teaspoon dried oregano
- 1 teaspoon thyme
- Salt and pepper to taste
- 2 cups cooked pasta
- 2 cups cooked chicken, shredded
- Fresh parsley for garnish
Instructions
- In a large pot, heat olive oil over medium heat.
- Add the onion and garlic; sauté until softened.
- Stir in carrots and celery; cook for about 5 minutes until they start to soften.
- Pour in the chicken broth and diced tomatoes, and add oregano and thyme.
- Bring to a boil, then reduce heat and simmer for about 20 minutes.
- Season with salt and pepper to taste.
- Stir in the cooked pasta and shredded chicken; heat through.
- Serve hot, garnished with fresh parsley.
