  • 2 cups cooked chicken, shredded

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the onion and garlic; sauté until softened.
  3. Stir in carrots and celery; cook for about 5 minutes until they start to soften.
  4. Pour in the chicken broth and diced tomatoes, and add oregano and thyme.
  5. Bring to a boil, then reduce heat and simmer for about 20 minutes.
  6. Season with salt and pepper to taste.
  7. Stir in the cooked pasta and shredded chicken; heat through.
  8. Serve hot, garnished with fresh parsley.
