Ingredients

  • 1 lb Italian sausage (mild or hot)
  • 2 tablespoons olive oil
  • 1 medium onion, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 3 cloves garlic, minced
  • 1 can (400 g) chopped tomatoes (including their liquid)
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • Fresh basil or parsley, for garnish
  • Crusty bread or rolls (optional, for serving)

Instructions

  1. In a large frying pan, warm 1 tablespoon of olive oil over medium heat. Add the Italian sausage and cook for about 5-7 minutes, turning occasionally, until browned on all sides. Take the sausage out of the pan and set it aside.
  2. Add the second tablespoon of olive oil to the same pan. Add the sliced onions and bell peppers, cooking for about 5 minutes, stirring frequently, until the vegetables start to soften.
  3. Incorporate the minced garlic, cooking for 1 minute until fragrant. Stir in the diced tomatoes with their juices and the Italian seasoning. Season with salt and pepper to taste.
  4. Slice the browned sausage into bite-sized pieces and return them to the skillet. Simmer the mixture for 10-15 minutes, stirring occasionally, until the sausage is fully cooked and the vegetables are tender.
  5. Turn off the heat and sprinkle with fresh basil or parsley for garnish. Serve hot with crusty bread or rolls on the side for dipping, or over pasta for a more filling meal.

Notes

Best served fresh from the skillet with crusty bread or over pasta. Can be stored in an airtight container in the fridge for leftovers.
