- 1 lb Italian sausage (mild or hot)
- 2 tablespoons olive oil
- 1 medium onion, sliced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 green bell pepper, sliced
- 3 cloves garlic, minced
- 1 can (400 g) chopped tomatoes (including their liquid)
- 1 teaspoon Italian seasoning
- Salt and pepper, to taste
- Fresh basil or parsley, for garnish
- Crusty bread or rolls (optional, for serving)
Instructions
- In a large frying pan, warm 1 tablespoon of olive oil over medium heat. Add the Italian sausage and cook for about 5-7 minutes, turning occasionally, until browned on all sides. Take the sausage out of the pan and set it aside.
- Add the second tablespoon of olive oil to the same pan. Add the sliced onions and bell peppers, cooking for about 5 minutes, stirring frequently, until the vegetables start to soften.
- Incorporate the minced garlic, cooking for 1 minute until fragrant. Stir in the diced tomatoes with their juices and the Italian seasoning. Season with salt and pepper to taste.
- Slice the browned sausage into bite-sized pieces and return them to the skillet. Simmer the mixture for 10-15 minutes, stirring occasionally, until the sausage is fully cooked and the vegetables are tender.
- Turn off the heat and sprinkle with fresh basil or parsley for garnish. Serve hot with crusty bread or rolls on the side for dipping, or over pasta for a more filling meal.
Notes
Best served fresh from the skillet with crusty bread or over pasta. Can be stored in an airtight container in the fridge for leftovers.
