- 1 pound Italian sausage
- 4 slices of bacon
- 2 cups fresh spinach
- 1 can (15 ounces) cannellini beans, drained and rinsed
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Cook the bacon in a large pot until crispy, then remove and set aside, leaving the fat in the pot.
- Add the Italian sausage to the pot and brown it, breaking it apart as it cooks.
- Add the diced onion and minced garlic, and sauté until the onion is translucent.
- Mix in the drained cannellini beans, chicken broth, and dried oregano. Bring to a gentle simmer.
- Add the fresh spinach and stir until it wilts. Season with salt and pepper to taste. Crumble the reserved bacon and fold it back into the soup before serving.
Notes
For enhanced flavor, consider using homemade chicken broth. Letting the soup sit allows flavors to develop further.
