  • 1/2 cup grated vegetarian Parmesan cheese (50 g)
  • 1/2 cup shredded plant-based mozzarella cheese (60 g)
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano (1 g)
  • 1 teaspoon dried basil (1 g)
  • 1/2 teaspoon salt (2.5 g)
  • 1/4 teaspoon black pepper (0.5 g)
  • 1 egg, beaten

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Roll out the puff pastry on a lightly floured surface to fit a baking sheet.
  3. Transfer the puff pastry to a parchment-lined baking sheet.
  4. Prick the pastry all over with a fork, leaving a 1-inch border unpricked.
  5. Bake the pastry for 10 minutes, then remove it from the oven and set aside.
  6. In a bowl, mix the ricotta, Parmesan, mozzarella, garlic, oregano, basil, salt, and pepper.
  7. Spread the ricotta mixture evenly over the baked puff pastry, avoiding the border.
  8. Arrange the zucchini slices over the ricotta mixture in a single layer.
  9. Brush the zucchini and pastry border with olive oil.
  10. Brush the pastry border with the beaten egg for a golden finish.
  11. Return the tart to the oven and bake for an additional 20-25 minutes.
  12. Remove from the oven when the pastry is golden brown and the zucchini is tender.
  13. Allow the tart to cool for a few minutes before slicing and serving.
