Ingredients

Scale
  • 3 cups all-purpose flour (360g)
  • 1 cup white sugar (200g)
  • 1 cup brown sugar (200g)
  • 5 teaspoons (18 ml) ground cinnamon
  • 1 teaspoon (5 ml) salt
  • 1 teaspoon (5 ml) baking soda
  • 1/4 teaspoon (1 ml) baking powder
  • 1/4 teaspoon (1 ml) powdered jalapeno pepper
  • 3 eggs
  • 1/2 cup vegetable oil (120ml)
  • 1/2 cup applesauce (120ml)
  • 2 teaspoons (10 ml) vanilla extract
  • 2 cups shredded zucchini (240g)
  • 2 fresh green peppers, chopped with seeds

Instructions

  1. Heat the oven to 350°F (175°C) and coat two 9x5x3-inch loaf tins with grease.
  2. In a large mixing bowl, combine the flour, sugars, cinnamon, salt, baking soda, baking powder, and powdered jalapeño pepper until they are thoroughly mixed.
  3. Incorporate the eggs, vegetable oil, applesauce, and vanilla extract into the dry mixture; stir until the batter is uniform and free of lumps.
  4. Gently mix in the shredded zucchini and chopped fresh green peppers, ensuring they are evenly distributed throughout the batter.
  5. Evenly distribute the batter between the greased loaf pans.
  6. Place the pans in the preheated oven and bake until a toothpick inserted into the center of the loaves comes out clean, approximately 60 minutes.
  7. Once baked, move the loaf pans to a wire rack and allow the bread to cool entirely before serving.

Notes

  • Thoroughly blend the dry ingredients to evenly spread the flavors of cinnamon and jalapeño throughout the bread.
  • Opt for fresh green peppers with seeds for added texture and a subtle kick of heat in each bite.
  • Let the bread cool completely on a wire rack to prevent sogginess.
