Description

Ingredients

  • 2 cups long grain rice
  • 1 lb chicken, diced
  • 1 lb shrimp, peeled and deveined
  • 1 lb andouille sausage, sliced
  • 1 onion, diced
  • 1 green bell pepper, diced
  • 2 celery stalks, diced
  • 4 garlic cloves, minced
  • 1 can diced tomatoes
  • 4 cups chicken broth
  • 2 tsp Cajun seasoning
  • Salt and pepper to taste
  • 2 green onions, chopped (for garnish)

Instructions

  1. In a large skillet, heat oil over medium heat. Sauté the onion, green bell pepper, celery, and garlic until soft.
  2. Add the chicken and sausage, cooking until browned.
  3. Stir in the rice and Cajun seasoning, ensuring the rice is mixed well with the meat and vegetables.
  4. Add the diced tomatoes and chicken broth, and bring to a boil.
  5. Reduce heat, cover, and simmer for about 20-25 minutes, or until rice is cooked.
  6. Add shrimp and cook for an additional 5 minutes until shrimp are pink.
  7. Season with salt and pepper, and garnish with green onions before serving.

Notes

Use a heavy-bottomed skillet to prevent burning or sticking. Adding more broth can fix dry jambalaya.
