- 2 cups long grain rice
- 1 lb chicken, diced
- 1 lb shrimp, peeled and deveined
- 1 lb andouille sausage, sliced
- 1 onion, diced
- 1 green bell pepper, diced
- 2 celery stalks, diced
- 4 garlic cloves, minced
- 1 can diced tomatoes
- 4 cups chicken broth
- 2 tsp Cajun seasoning
- Salt and pepper to taste
- 2 green onions, chopped (for garnish)
Instructions
- In a large skillet, heat oil over medium heat. Sauté the onion, green bell pepper, celery, and garlic until soft.
- Add the chicken and sausage, cooking until browned.
- Stir in the rice and Cajun seasoning, ensuring the rice is mixed well with the meat and vegetables.
- Add the diced tomatoes and chicken broth, and bring to a boil.
- Reduce heat, cover, and simmer for about 20-25 minutes, or until rice is cooked.
- Add shrimp and cook for an additional 5 minutes until shrimp are pink.
- Season with salt and pepper, and garnish with green onions before serving.
Notes
Use a heavy-bottomed skillet to prevent burning or sticking. Adding more broth can fix dry jambalaya.
