Ingredients

- 225g sugar
- 100g butter, softened
- 2 lemons, zested and juiced
- 4 eggs
- 200ml milk
- 200g self-raising flour
- 300ml boiling water
Instructions
- Preheat the oven to 180°C (350°F).
- Cream together the sugar and butter until light and fluffy.
- Add the lemon zest, lemon juice, and eggs, mixing well after each addition.
- Gradually add the milk and mix until combined.
- Sift in the self-raising flour and mix until just incorporated.
- Pour the mixture into a buttered baking dish.
- Pour the boiling water over the pudding mixture (do not stir).
- Bake in the preheated oven for 30-35 minutes, or until the top is golden and the sauce is bubbling underneath.
- Serve warm, optionally with cream or ice cream.
Notes
Ensure all ingredients are at room temperature for the best results. Fresh lemons are recommended for maximum flavor.
