Description

A classic dessert with a zesty lemon flavor and a delightful self-saucing layer.


Ingredients

  • 225g sugar
  • 100g butter, softened
  • 2 lemons, zested and juiced
  • 4 eggs
  • 200ml milk
  • 200g self-raising flour
  • 300ml boiling water

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. Cream together the sugar and butter until light and fluffy.
  3. Add the lemon zest, lemon juice, and eggs, mixing well after each addition.
  4. Gradually add the milk and mix until combined.
  5. Sift in the self-raising flour and mix until just incorporated.
  6. Pour the mixture into a buttered baking dish.
  7. Pour the boiling water over the pudding mixture (do not stir).
  8. Bake in the preheated oven for 30-35 minutes, or until the top is golden and the sauce is bubbling underneath.
  9. Serve warm, optionally with cream or ice cream.
