  • 2 tablespoon s honey (30 g)
  • 2 tablespoon s milk (30 ml)
  • 1/4 teaspoon vanilla extract (1.25 ml)
  • 1/4 teaspoon salt (1.5 g)

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Line a cupcake tray with paper liners.
  3. In a small bowl, mix honey and milk until combined.
  4. Separate egg yolks from the whites.
  5. In a large bowl, beat egg yolks with sugar until pale and thick.
  6. Add honey and milk mixture, and vanilla extract to the yolks; blend well.
  7. Sift flour and salt into the yolk mixture; fold gently to combine.
  8. In a separate bowl, beat the egg whites until stiff peaks form.
  9. Gently fold the egg whites into the yolk mixture in three parts.
  10. Pour the batter evenly into the prepared cupcake liners.
  11. Tap the tray lightly on the counter to remove air bubbles.
  12. Bake for 20-25 minutes or until a toothpick comes out clean.
  13. Let cupcakes cool in the tray for 5 minutes.
  14. Transfer cupcakes to a wire rack to cool completely.
