- 8 oz mushrooms, sliced
- 1 cup heavy cream (or coconut cream for dairy-free)
- 3 cloves garlic, minced
- 1 onion, diced
- 2 tablespoons olive oil
- 1 tablespoon butter
- 1 teaspoon thyme
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Season chicken with salt and pepper.
- Heat oil in a large skillet over medium-high heat.
- Cook chicken until internal temperature reaches 165°F.
- Remove chicken and set aside.
- In the same pan, sauté mushrooms, garlic, and onion.
- Add cream and simmer until sauce thickens.
- Return chicken to pan and heat through.
- Garnish with parsley and serve.

- Chicken thighs can be substituted for breasts for more moisture and flavor.
