Ingredients

  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup diced tomatoes
  • 2 cups cauliflower florets
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • Salt and pepper, to taste
  • Optional: smoked paprika or cayenne pepper for seasoning

Instructions

  1. In a large pot over medium heat, brown the ground beef until cooked through. Drain excess fat.
  2. Add the diced onion and minced garlic, sautéing until fragrant and translucent.
  3. Pour in the beef broth, followed by the diced tomatoes and cauliflower florets.
  4. Bring the mixture to a boil, then reduce heat and let it simmer for about 15 minutes until the cauliflower is tender.
  5. Gradually stir in the heavy cream and shredded cheddar cheese, mixing until melted and creamy.
  6. Season with salt, pepper, and optional spices to taste.
  7. Let the soup sit for a few minutes before serving to enhance the flavor.

Notes

For a thicker soup, consider blending part of the cauliflower. Store leftovers in an airtight container for up to three days.
