- 2 cups cauliflower florets

- Optional: smoked paprika or cayenne pepper for seasoning
Instructions
- In a large pot over medium heat, brown the ground beef until cooked through. Drain excess fat.
- Add the diced onion and minced garlic, sautéing until fragrant and translucent.
- Pour in the beef broth, followed by the diced tomatoes and cauliflower florets.
- Bring the mixture to a boil, then reduce heat and let it simmer for about 15 minutes until the cauliflower is tender.
- Gradually stir in the heavy cream and shredded cheddar cheese, mixing until melted and creamy.
- Season with salt, pepper, and optional spices to taste.
- Let the soup sit for a few minutes before serving to enhance the flavor.
Notes
For a thicker soup, consider blending part of the cauliflower. Store leftovers in an airtight container for up to three days.
