Description

Delicious Korean cheese potato pancakes made with crispy potatoes and gooey mozzarella cheese, perfect for sharing memories and joy.


Ingredients

  • 400 g (14 oz) russet potatoes
  • ¼ cup (34 g) cornstarch
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 large green onions (finely chopped)
  • 1 cup (120 g) mozzarella cheese (grated)

Instructions

  1. Combine the grated potatoes, cornstarch, salt, pepper, and chopped green onions in a large bowl. Set aside a little green onion for garnish.
  2. Mix well until all ingredients are thoroughly combined.
  3. Add the grated cheese into the mixture and combine. Optionally, mash the potatoes slightly to form balls with cheese at the center.
  4. Heat a non-stick pan over medium heat and drizzle with oil.
  5. Scoop a spoonful of the potato mixture onto the pan, spreading it into a round shape.
  6. Cook pancakes for about 3-4 minutes on each side, or until golden brown and crispy.
  7. Sprinkle grated cheese on top of each pancake in the pan, allowing it to melt.
  8. Transfer pancakes to a serving plate, garnishing with additional green onions before serving warm.
