- 400 g (14 oz) russet potatoes
- ¼ cup (34 g) cornstarch
- ½ tsp salt
- ¼ tsp black pepper
- 2 large green onions (finely chopped)
- 1 cup (120 g) mozzarella cheese (grated)
Instructions
- Combine the grated potatoes, cornstarch, salt, pepper, and chopped green onions in a large bowl. Set aside a little green onion for garnish.
- Mix well until all ingredients are thoroughly combined.
- Add the grated cheese into the mixture and combine. Optionally, mash the potatoes slightly to form balls with cheese at the center.
- Heat a non-stick pan over medium heat and drizzle with oil.
- Scoop a spoonful of the potato mixture onto the pan, spreading it into a round shape.
- Cook pancakes for about 3-4 minutes on each side, or until golden brown and crispy.
- Sprinkle grated cheese on top of each pancake in the pan, allowing it to melt.
- Transfer pancakes to a serving plate, garnishing with additional green onions before serving warm.
