Ingredients

- 3–4 lbs beef roast
- 1/4 cup soy sauce
- 1/4 cup water
- 2 tablespoons brown sugar
- 2 tablespoons rice vinegar
- 2 tablespoons sesame oil
- 4 cloves garlic, minced
- 1 inch ginger, grated
- 2 cups carrots, chopped
- 2 cups potatoes, quartered
- 1 onion, sliced
- Salt and pepper to taste
- Green onions for garnish
Instructions
- In a large bowl, mix together the soy sauce, water, brown sugar, rice vinegar, sesame oil, garlic, and ginger to create the marinade.
- Place the beef roast in a slow cooker and pour the marinade over it.
- Add the chopped carrots, quartered potatoes, and sliced onion around the beef.
- Season with salt and pepper.
- Cover and cook on low for 6-8 hours or until the beef is tender.
- Once done, remove the beef from the slow cooker and let it rest before slicing.
- Serve the sliced beef with the vegetables, and garnish with chopped green onions.
Notes
Consider searing the roast before slow cooking for added flavor. Serve with steamed rice or bread to soak up the sauce.
