Ingredients

  • 1/4 cup lavender sugar
  • 1/2 cup unsalted butter, softened
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/4 cup freshly squeezed lemon juice
  • 1 tablespoon lemon zest
  • 1 tablespoon dried culinary lavender (optional)
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking dish.
  2. Mix together the flour, lavender sugar, salt, and baking powder in a bowl.
  3. Cut in the butter until the mixture resembles coarse crumbs.
  4. Press the mixture into the bottom of the prepared baking dish.
  5. Bake for 15-20 minutes until lightly golden.
  6. Whisk together the granulated sugar, eggs, lemon juice, lemon zest, and dried lavender if using.
  7. Pour the lemon filling over the pre-baked crust.
  8. Bake for an additional 20-25 minutes until set.
  9. Let cool completely before dusting with powdered sugar and cutting into bars.

For better flavor, use fresh lemons and ensure to allow the bars to cool completely before cutting.
