Ingredients

- 1 cup all-purpose flour
- 1/4 cup lavender sugar
- 1/2 cup unsalted butter, softened
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
- 1 cup granulated sugar
- 2 large eggs
- 1/4 cup freshly squeezed lemon juice
- 1 tablespoon lemon zest
- 1 tablespoon dried culinary lavender (optional)
- Powdered sugar for dusting
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking dish.
- Mix together the flour, lavender sugar, salt, and baking powder in a bowl.
- Cut in the butter until the mixture resembles coarse crumbs.
- Press the mixture into the bottom of the prepared baking dish.
- Bake for 15-20 minutes until lightly golden.
- Whisk together the granulated sugar, eggs, lemon juice, lemon zest, and dried lavender if using.
- Pour the lemon filling over the pre-baked crust.
- Bake for an additional 20-25 minutes until set.
- Let cool completely before dusting with powdered sugar and cutting into bars.
Notes
For better flavor, use fresh lemons and ensure to allow the bars to cool completely before cutting.
