Transform leftover mashed potatoes into delightful cheese puffs that are perfect as an appetizer or snack.


Ingredients

  • 2 cups chilled mashed potatoes
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped chives or green onions
  • 1 large egg
  • 1/2 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 400°F (200°C) and grease a muffin tin.
  2. In a large bowl, combine the chilled mashed potatoes, shredded cheddar cheese, chopped chives or green onions, all-purpose flour, baking powder, garlic powder, black pepper, and the beaten egg.
  3. Mix well until the ingredients blend into a uniform mixture.
  4. Scoop the mixture into the muffin cups, filling nearly to the top.
  5. bake for 20-25 minutes or until the tops are crispy and golden.
  6. Remove the puffs from the oven and let them cool for 5 minutes before serving.
