- 2 cups chilled mashed potatoes
- 1 cup shredded cheddar cheese
- 1/4 cup chopped chives or green onions
- 1 large egg
- 1/2 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon garlic powder
- 1/4 teaspoon black pepper
Instructions
- Preheat your oven to 400°F (200°C) and grease a muffin tin.
- In a large bowl, combine the chilled mashed potatoes, shredded cheddar cheese, chopped chives or green onions, all-purpose flour, baking powder, garlic powder, black pepper, and the beaten egg.
- Mix well until the ingredients blend into a uniform mixture.
- Scoop the mixture into the muffin cups, filling nearly to the top.
- bake for 20-25 minutes or until the tops are crispy and golden.
- Remove the puffs from the oven and let them cool for 5 minutes before serving.
Notes
Feel free to experiment with different types of cheese or add leftover cooked veggies or bacon bits.
