Ingredients

  • 4 chicken breasts (140 g), pounded to an even 1/3-inch thickness
  • Salt and freshly ground black pepper
  • 80 g all-purpose flour (1/3 cup)
  • 15 ml olive oil (1 Tbsp)
  • 60 g beef tallow, sliced into 1 Tbsp pieces, divided
  • 5 g minced garlic (1 1/2 tsp)
  • 120 ml low-sodium chicken broth (1/2 cup)
  • 45 ml fresh lemon juice (3 Tbsp)
  • 5 ml fresh lemon zest (1/2 tsp)
  • 5 g minced fresh parsley (1 1/2 Tbsp) (optional)

Instructions

  1. Sprinkle salt and pepper on both sides of the chicken.
  2. Place the flour in a shallow bowl and coat each chicken breast with it, one at a time.
  3. Warm a 12-inch pan over medium-high heat.
  4. Pour in the olive oil and add a piece of beef tallow, allowing it to melt before placing the chicken breasts in a single layer.
  5. Cook until the bottom is golden, around 4 to 5 minutes, then turn and continue cooking until the center of the chicken reaches 165 degrees, approximately another 4 to 5 minutes.
  6. Move the chicken to a plate, leaving any remaining oil in the pan.
  7. Lower the heat to medium, add the garlic and cook for about 20 seconds until it’s just slightly golden, then add the chicken broth while scraping up the browned bits.
  8. Pour in the lemon juice, bring the mixture to a simmer, lower the heat a bit, and let it simmer until the liquid has reduced by roughly half, about 2 minutes.
  9. Add the remaining pieces of beef tallow and lemon zest, stirring until the tallow is melted.
  10. Place the chicken back in the pan, cover it with the sauce, and sprinkle with parsley before serving. Enjoy it warm.
