Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3 large eggs (room temperature)
  • 3/4 cup unsalted butter (softened)
  • 3/4 cup milk
  • 2 tablespoons lemon zest
  • 1/4 cup fresh lemon juice
  • 1 teaspoon vanilla extract
  • 2 cups heavy whipping cream
  • 1/4 cup powdered sugar (plus more for dusting)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour your 8-inch round cake pan with a removable bottom.
  3. In a medium bowl, sift together the flour, baking powder, and salt. Set aside.
  4. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy—about 3-4 minutes.
  5. Add the eggs one at a time, beating well after each addition.
  6. Stir in the lemon zest and vanilla extract.
  7. Gradually add the dry mixture to the wet ingredients, alternating with milk and lemon juice. Start and end with the dry mixture; mix until just combined.
  8. Pour the batter into the prepared pan and smooth the top.
  9. Bake for 40-45 minutes, or until a toothpick inserted in the center comes out clean.
  10. Allow to cool in the pan for 10 minutes, then remove and cool completely on a wire rack.
  11. After your cake cools, whip the heavy cream and powdered sugar in a chilled bowl until stiff peaks form.
  12. Transfer to a piping bag fitted with a star tip and dust the cooled cake with powdered sugar.
  13. Pipe rosettes of whipped cream around the edge to create a stunning presentation.

Notes

For best flavor, use fresh lemons and avoid bottled lemon juice.
